Preparing olive the Kinsterna way
The olive harvesting period lasts from around mid-October to Epiphany. The estate workers collect the olives and after hand selecting them, they place them in special crates. These are then offered to any of our visitors who are interested in bottling table olives from oil extraction olives (Athinolia, Koroneiki) following the mansion's simple recipe for tasty, uncracked olives. Olives prepared in this way keep longer since they are preserved in a special plastic bottle by adding water, salt, lemon and aromatic herbs (oregano, thyme, coriander, fennel seeds, etc.) from our estate.
